张家口红

银鲳鱼，原产于亚马逊河。又名银盘鲳、银盘鱼。体形和习性 体形和食人鲳相似。长20厘米左右。全身银白色，发情期下鄂至腹部、臀部及臀鳍前几根鳍条，均为红色。银鲳性情温和，不袭击它鱼，可以和其他大型鱼混养。喜微酸性软水，生活条件不苛刻。杂食性，爱吃水草，是养水箱中不宜植草否则会被其吃光。也食动物性饵料。爱成群结队游泳，体格强健，容易饲养。

龙头鱼(Bombay duck)，灯笼鱼目，龙头鱼科，学名Harpadon nehereus;分布于太平洋、印度北部的河口，为沿海中、下层鱼类，是中国沿海常见食用鱼类。体长达41公分(16吋)，色暗，淡灰色或褐色，具黑色细点。口大、前位，尾鳍叉形，胸鳍及腹鳍大。本属有几个近缘种分布于从非洲到澳大利亚和新几内亚。

带鱼属于脊索动物门下脊椎动物亚门中的硬骨鱼纲鲈形目带鱼科。又叫刀鱼、裙带、肥带、油带、牙带鱼等，性凶猛。青岛、日照黄海沿岸城市称鱽鱼。带鱼的体型侧扁如带，呈银灰色，背鳍及胸鳍浅灰色，带有很细小的斑点，尾巴呈黑色，带鱼头尖口大，至尾部逐 渐变细，身高为头长的2倍，全长1米左右。性凶猛，主要以毛虾、乌贼为食。主要分布于西太平洋和印度洋，在中国的黄海、东海、渤海一直到南海都有分布，和大黄鱼、小黄鱼及乌贼并称为中国的四大海产。

大黄鱼（ Larimichthys crocea），硬骨鱼纲，鲈形目（Perciformes），石首鱼科（Sciaeni-dae），黄鱼属，又名黄鱼、大王鱼、大鲜、大黄花鱼、 红瓜、金龙、黄金龙、桂花黄鱼、大仲、红口、石首鱼、石头鱼、黄瓜鱼，为传统“四大海产”（大黄鱼、小黄鱼、带鱼、乌贼）之一，是我国近海主要经济鱼类。中国沿海的大黄鱼可分为3个种群：①东海黄鱼一东海地理种群（第一地理种群）。分布于黄海南部至台湾海峡北部，包括吕泗洋、岱衢洋、嵊山渔场、猫头洋、洞头洋、福建的官井洋直至闽江口海域，是中国大黄鱼的主要群体。②台湾海峡南部—粤东地理种群（第二地理种群）。③粤西地理群（第三地理种群）。主要分布于珠江口以西至琼州海峡的南海区。

大黄鱼，体延长，侧扁，体长约40-50cm。金黄色。尾柄细长。鳞较小，背鳍起点至侧线间具8-9行鳞。椎骨25-27枚。平时栖息较深海区，4-6月向近海洄游产卵，产卵后分散在沿岸索饵，以鱼虾等为食。秋冬季又向深海区迁移。鳔能发声，渔民常借此估测鱼群的大小。为中国重要的经济鱼类。供鲜食或制黄鱼鲞等；鳔可制胶。已经人工养殖粤东地理种群（第二地理种群）。

小黄鱼(Larimichthys polyactis)又名小黄花鱼，脊椎动物，硬骨鱼纲，石首鱼科，又名:小鲜、大眼、花色、小黄瓜、古鱼、黄鳞鱼、小春色、金龙、厚鳞仔，也叫"黄花鱼"、"小黄花"。体形似大黄鱼，但头较长，眼较小，鳞片较大，尾柄短而宽，背鳍起点至侧线间具5-6行鳞，金黄色。椎骨28~30块。耳石较大。体长约20余厘米，体长最长可达40cm。体背灰褐色，腹部金黄色。为近海底层结群性洄游鱼类，栖息于泥质或泥沙底质的海区。产卵场在沿岸海区水深10~25米，越冬场一般为40~80米，鱼群有明显的垂直移动现象，黄昏时上升，黎明下降，白昼栖息于底层或近底层。冬季在深海越冬，春季向沿岸洄游，3-6月间产卵，主要以糠虾、毛虾及小型鱼类为食，秋末返回深海。鳔能发声。中国产于东海、黄海、渤海，朝鲜半岛西海岸也有分布。为中国重要经济鱼类。供鲜食或制成咸干品;鳔可制鱼鳔胶;精巢可制鱼精蛋白。

张家口红

鲭鱼是一种很常见的可食用鱼类，出没于西太平洋及大西洋的海岸附近，喜群居。在中文语境下要注意区别于中国的四大家鱼之一的"青鱼"。鲭鱼平均身长30至50厘米，寿命最长可至11年，它以吞噬浮游生物及鲟鱼、鳕鱼和鲱鱼所产的卵为生。鲭鱼又名"青花鱼"。俗名鲐鱼、大西洋鲭鱼、波士顿鲭鱼、tin-ker鲭鱼、太平洋鲭鱼、日本鲐鱼、chub鲭鱼、美国鲭鱼、蓝鲭鱼、竹马鲛鱼。鲐鱼为我国重要的中上层经济鱼类之一。此种鱼类分布广、生长快、产量高、鱼肉每百克含蛋白质21.4克、脂肪7.4克，肉质坚实，除鲜食外还可晒制和做罐头，其肝可提炼鱼肝油。鲐鱼为远洋，暖水性鱼类，不进入淡水，每年进行远距离回游，游泳能力强，速度大。春夏时多栖息于中上层，活动在温跃层以上，在生殖季节中常结成大群到水面活动。捕捞适宜水温在8-24摄氏度之间，以14-16摄氏度时渔获量最高。有趋光性繁殖习性。

三疣梭子蟹，学名Portunus trituberculatus，梭子蟹科Portunidae、梭子蟹属。俗名梭子蟹、枪蟹、海螃蟹、海蟹、海虫、水蟹、门蟹、小门子、蝎子、盖鱼、三点蟹、童蟹、飞蟹、烟蟀，英文名Swimming crab。分布于中国辽宁、河北、天津、山东、江苏、浙江、福建等海域。一般从南到北，3~5月和9~10月为生产旺季，渤海湾辽东半岛4~5月产量较多。三疣梭子蟹是中国重要的出口畅销品之一，主要输往日本，香港、澳门等国家和地区。值得注意的是，梭子蟹身处海洋，离开高盐分高氧环境后存活率大大降低。与河蟹最大的不同是，海蟹虽然存活率较低，但是短时间内死亡且未发出异味的梭子蟹仍可供人食用，其丰富的营养和鲜嫩的口感不亚于鲜活。

皮皮虾，学名叫“虾蛄”，又叫爬虾或者濑尿虾，属于节肢动物门，甲壳动物亚门，软甲纲，掠虾亚纲，口足目，虾蛄科品种。是常见的海产经济动物，为底牺穴居虾类，生活于浅潮和深海泥沙或珊瑚礁中，昼伏夜出。其家族多达60多种。分布范围极广，广东有泰国进口虾蛄，其身长达30厘米，国产虾蛄体长约10至15厘米，重50至100克。虾蛄是沿海近岸性品种，价格低廉，是一种营养丰富、汁鲜肉嫩的海味食品。
